Inky 25

Inky is our annual blend of imperial stout aged in some of our finest barrels. Our only rule for this beer is that it has to be composed of imperial stout and aged in barrels that are 1, 2 and 3 years old (ish).

Inky (December 2025) is composed of: one part 1792 bourbon barrel aged for 34 months; one part Willett Bourbon Barrel aged for 30 months and one part Heaven Hill bourbon barrel aged for 22 months with just a splash of Moon Port for extra complexity.

Inky is always special to us. We dig out characterful barrels to anchor the blend and provide it with a structure that only patience, time and careful stewarding can provide. This year's blend is a delectable melange presenting notes of chocolate, oak, caramel, spirit and toffee.

Inky (December 2025) is the culmination of many years of planning, brewing, and aging. It is the product of much patience, struggle and a focused eye to the future. A beer that rewards patience, flexibility and a wanton disregard for ROI.
